The sweetener used primarily in our sugar-free chocolates and fudge is maltitol.  Maltitol is  
made by the hydrogenation of maltose obtained from starch.  Maltitol is a sugar-alcohol
absorbed slower than sucrose (sugar) into the blood stream. The slower absorption allows the
body to process the sweetener without the sugar spike dangerous to diabetics.  Maltitol is a
reduced-calorie sweetener with only 2.1 calories per gram.  Sucrose contains 4 calories per
gram. Maltitol does not promote tooth decay.  As with other sugar-alcohols, maltitol may produce
a laxative and/or bloating effect in some sensitive people. Sorbitol and isomalt may also be used
in some chocolates and some fudge flavors may contain sucralose.

Our cocoas are sweetened with Splenda® (they do contain 1 gram of sugar).  You can find
